Fresh clam fritters

A great way to serve up fresh clams.

Ingredients

1 dozen medium-sized clams, shucked and chopped
Salt and pepper, and nutmeg
2 teaspoons chopped chives
1 tablespoon all purpose flour
1 tablespoon fresh bread crumbs
1 large egg, beaten
1 teaspoon baking powder
Oil for deep fat frying


Cooking Directions

Heat oil for frying to 375 degrees.

Mix the clams, seasoning to taste, chives, flour, bread crumbs, egg, and baking powder together.

Drop by spoonfuls into the hot oil, and fry until golden brown. Transfer to absorbent paper toweling. Repeat with remaining fritters. Serve immediately.
